Topfenbrot &#8211; noch nie geh\u00f6rt, klingt aber gut. Also &#8211; ran an die Arbeit. \u00a0Da ich kein l\u00e4ngliches G\u00e4rk\u00f6rberl besitze (werde mir demn\u00e4chst zulegen), hab ich mich zu einem runden Laib entschlossen. Die andere H\u00e4lfte des Teiges wird zu Laberln ( rund gewirkt wie<a href=\"http:\/\/www.homebaking.at\/wachauer-schleifen\/\"> Wachauer<\/a>) geformt. Ich hab mir was Neues einfallen lassen. Nur so lange am schnellen Gang kneten, bis er sich vom Kesselrand zu l\u00f6sen beginnt. Nach dem Kneten in einer Wanne 40 Minuten zugedeckt reifen lassen (bei 20 Minuten 1x falten).<\/p>\n<p>Auswiegen, \u201clocker\u201d rundwirken\u00a0und zu Striezel formen. Mit Schluss nach oben in G\u00e4rk\u00f6rben auf die Gare stellen. (Man kann auch einen runden Laib als Form w\u00e4hlen)<\/p>\n<p>Bei 3\/4 Gare aufschlagen, mit einem scharfen Messer einschneiden und mit Schwaden \u00a0bei 250\u00b0C\u00a0backen.
