Was liegt da n\u00e4her, als sofort ein italienisches Brot zu backen. Inspiriert dazu wurde ich aber in Klagenfurt, genauer gesagt am Benediktinerplatz wo zweimal die Woche ital. Marktfiranten ihre Waren feilbieten. Einer von ihnen hat ein wunderbares Brot, locker, gelblich &nbsp;und sehr rustikal. Dieses versuche ich nachzumachen. Ich nenne es &#8211; Pane Italiano.<\/p>\n<p><strong>Rezept f\u00fcr ein Brot von ca 1649g:<\/strong><\/p>\n<ul>\n<li><b>Biga:<\/b><\/li>\n<li>500 g Semola di grano duro rimacinata (Hartweizengrie\u00df)<\/li>\n<li>260 g Wasser<\/li>\n<li>5 g frische Hefe<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ul>\n<li><b>Hauptteig:<\/b><\/li>\n<li>Biga<\/li>\n<li>250&nbsp;g Semola di grano duro rimacinata (Hartweizengrie\u00df)<\/li>\n<li>250 g Tipo 0&nbsp;<\/li>\n<li>360 g Wasser<\/li>\n<li>22 g Salz<\/li>\n<li>2 g frische Hefe<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p>F\u00fcr den Vorteig (Biga) alle Zutaten miteinander verkneten und bei ca. 16\u00b0C 16-18 Stunden reifen lassen.<\/p>\n<p>F\u00fcr den Hauptteig den Vorteig (Biga), Hartweizengrie\u00df, Tipo 0, 250 g Wasser, Salz und Hefe verkneten, nach und nach das restliche Wasser zugeben. Insgessamt etwa 20 Minuten kneten. An einem k\u00fchlen Ort drei&nbsp;Stunden ruhen lassen, nach eineinhalb Stunden falten.<\/p>\n<p>Den Teig zu einem runden Laib formen und ca. eine Stunde gehen lassen. Den Laib einschneiden und bei 250\u00b0C mit Schwaden ca. 10 Minuten backen, anschlie\u00dfend Schwaden ablassen,&nbsp;die Temperatur auf 200\u00b0C senken und kr\u00e4ftig&nbsp;&nbsp;ausbacken.&nbsp;<a href=\"http:\/\/www.samskitchen.at\/?attachment_id=3229\" rel=\"attachment wp-att-3229\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-full
