Das Bl\u00fctenbrot hat es mir angetan. Wundersch\u00f6n geformt und mit unterschiedlichen Saaten bestreut. Ein Hingucker. Aber nicht nur f\u00fcrs Auge auch der Geschmack ist sehr ansprechbar.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #343434;\">\u00a0<\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\"><b>Sauerteig:<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">120g Weizenmehl W700<br \/>\n<\/span><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">120g Wasser (45\u00b0C)<br \/>\n<\/span><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">10\u00a0g Weizenanstellgut<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Alles gut vermischen und bei 30 Grad\u00a0\u00fcber Nacht reifen lassen.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\"><b>Hauptteig:<\/b><\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">800 g Weizenmehl T80 oder W1600<br \/>\n<\/span><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">100 g Roggenmehl\u00a0T960<br \/>\n<\/span><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">640 g Wasser (kalt)<br \/>\n<\/span><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">8 g Hefe<br \/>\n<\/span><\/span><\/span><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">22 g Salz<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Alle Zutaten auch den Sauerteig ca. 2 Minuten so vermischen dass keine Mehlklumpen mehr sichtbar sind. Dann genehmigen wir den Teig eine Ruhephase von ca. 15 Minuten. Anschliessend wird der Teig sch\u00f6n ausgekostet \u2013 solange kneten bis es sich von der Sch\u00fcssel l\u00f6st und sch\u00f6n glatt ist.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Nun braucht der Teig eine Teigruhe von zwei Stunden. Nach einer Stunde strecken und falten.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Da das Blumenbrot eine sch\u00f6ne gleichm\u00e4ssige Porung haben sollte, schlagen wir den Teig zusammen. So und nun beginnen wir die Blume zu fabrizieren.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Da wir zwei Brotblumen backen m\u00f6chten, stechen wir 8 St\u00fccke zu je 200 g und zwei zu je 100 g ab.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Die 200 St\u00fccke rollen wir zu Zylinder auf, die 100 g St\u00fccke schleifen wir rund. Darauf folgt ein Entspannungsphase von 15 Minuten.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Die acht Zylinder formen wir gleichm\u00e4ssig zu \u201eKeulen\u201c.\u00a0Die zwei kleinen Teigst\u00fccke\u00a0sind eh schon rund geschliffen.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Alle Teile \u00a0befeuchten und in verschiedenen Saaten w\u00e4lzen.\u00a0<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Wie im Bild gezeigt ordnen wir die \u201eKeulen\u201c so an, dass sich ihre Spitzen in der Mitte treffen. Die Kugel legen wir dann in die Mitte. Die \u201eBl\u00fctenbl\u00e4tter\u201c legen wir dann gleichm\u00e4ssig um die Kugel herum. Vorsicht \u2013 nicht zu eng.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Mit Plastik abdecken und ca eine Stunde bei 30 Grad gehen lassen.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Mittlerweile sollte der Ofen schon auf Betriebstemperatur von 250 Grad aufgeheizt worden sein.<\/span><\/span><\/span><\/p>\n<p><span style=\"font-family: Arial, sans-serif;\"><span style=\"font-size: medium;\"><span style=\"color: #343434;\">Die Bl\u00fctenbl\u00e4tter der L\u00e4nge nach einschneiden und mit Schwaden fallen auf 200 Grad ca. 35 \u2013 40 Minuten
