Damals gelang mir ein durchaus gelungenes Geb\u00e4ck, das durchaus mit dem Original mithalten konnte. Heute gibts die &#8222;light&#8220; Variante. Einen K\u00f6rndlspitz ohne Vollkornmehl. Nicht \u00a0dass ich kein Vollkornmehl mag, ganz im Gegenteil. Aber ich hatte gerade keine K\u00f6rner im Schrank und so mach ich es halt mit normalem T960. Am Ende der Knetzeit, die K\u00f6rner einrieseln lassen.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #343434;\"><span style=\"font-family: SourceSansPro-Regular, serif;\"><span style=\"font-size: large;\">Den Teig in eine ge\u00f6lte Sch\u00fcssel geben und eine Stunde bei ca. 24 Grad gehen lassen. Einmal\u00a0zusammenschlagen.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #343434;\"><span style=\"font-family: SourceSansPro-Regular, serif;\"><span style=\"font-size: large;\">Den Teig in ca. 80g\u00a0 St\u00fccke teilen und rund wirken. Mit einen 50\/50 Mischung aus Roggenmehl und Kartoffelst\u00e4rke bestauben und 15 Minuten rasten lassen.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #343434;\"><span style=\"font-family: SourceSansPro-Regular, serif;\"><span style=\"font-size: large;\">Die Teiglinge dann mit einem Rollholz oval ausrollen und so wie Salzstangerln straff aufrollen. Auf ein Lochblech oder Backpapier mit Schluss nach unten legen und sch\u00f6n aufgehen lassen. Mit Wasser einspritzen und nach Wunsch ev. mit Saaten oder Salz bestreuen und zweimal einschneiden.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #343434;\"><span style=\"font-family: SourceSansPro-Regular, serif;\"><span style=\"font-size: large;\">Backofen mit Backstein\u00a0 auf 230 Grad aufheizen. Mit viel Schwaden einschie\u00dfen und fallend auf 200 Grad ca 25 Minuten sch\u00f6n braun backen.<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #343434;\"><span style=\"font-family: SourceSansPro-Regular, serif;\"><span style=\"font-size: large;\">Schwaden nach 10 Minuten ablassen (Ofent\u00fcr weit \u00f6ffnen).<\/span><\/span><\/span><\/p>\n<p><span style=\"color: #343434;\"><span style=\"font-family: SourceSansPro-Regular, serif;\"><span style=\"font-size: large;\">Auf einem Gitterrot ausk\u00fchlen lassen und genie\u00dfen.<\/span><\/span><\/span><\/p>\n<p><a
