Ich werde jetzt mal die Grenzen meines Ofens ausloten. Zwei 3 KG Leibe &#8211; freigeschoben.<\/p>\n<p>Das urspr\u00fcngliche Rezept stammt von <a href=\"https:\/\/baeckersuepke.wordpress.com\/2009\/08\/22\/schwarzwalder-kruste\/\">B\u00e4cker S\u00fcpke<\/a>\u00a0oder doch von <a href=\"http:\/\/ketex.de\/blog\/brotrezepte\/mit-gesauertem-vorteig\/basler-brot\/\">Kettex<\/a>\u00a0oder von &#8230;&#8230;..??????<\/p>\n<p>Egal ich back jetzt so ein Brot:<\/p>\n<p><strong> Zutaten f\u00fcr einen Leib mit ca. 3,2 KG\u00a0<\/strong><\/p>\n<p>Sauerteig:<\/p>\n<p>215 g Roggenmehl Typ\u00a0960<br \/>\n215 ml Wasser<br \/>\n20 g Roggen-ASG<br \/>\nVorteig:<\/p>\n<p>720 g Weizenmehl Typ\u00a01600<br \/>\n3 g Hefe<br \/>\n3 g Salz<br \/>\n500 ml Wasser<br \/>\nHauptteig:<\/p>\n<p>Sauerteig<br \/>\nVorteig<br \/>\n720g Weizenmehl Typ\u00a01600<br \/>\n170 g Roggenmehl Typ\u00a0960<br \/>\n20 g Schweineschmalz<br \/>\n18 g Hefe<br \/>\n37 g Salz<br \/>\n520 ml Wasser<br \/>\n1 EL fl\u00fcssiges Backmalz<\/p>\n<p>Zubereitung<\/p>\n<p>Sauerteig:<\/p>\n<p>Die Sauerteigzutaten sch\u00f6n verr\u00fchren und so ca. 16-18 Stunden bei Raumtemperatur reifen lassen. Das Gef\u00e4\u00df sollte wie \u00fcblich abgedeckt werden.<\/p>\n<p>Vorteig:<\/p>\n<p>Ebenfalls gut vermischen, \u00a0abdecken, zwei Stunden anspringen lassen und f\u00fcr ca. 16 Stunden in den K\u00fchlschrank stellen.<\/p>\n<p>Hauptteig:<\/p>\n<p>Alle Zutaten incl. Vorteig und Sauerteig zu einem sch\u00f6nen glatten Teig kneten. Zuerst ca. 10 Minuten langsam, dann einige Minuten schnell. Dann f\u00fcr 30 Minuten abgedeckt im Kessel ruhen lassen. Im Anschluss an die Teigruhe sollte der Teig \u00a0gestreckt und gefaltet werden (stretch &amp; fold). Darauf folgt eine Entspannungsphase von ca 15 Minuten.<\/p>\n<p>Den Teig auf einer bemehlten Arbeitsfl\u00e4che rund wirken und mit dem Schluss nach unten in einen bemehlten G\u00e4rkorb setzten.<\/p>\n<p>Abdecken und ca. 60 Minuten zur Gare stellen.<\/p>\n<p>Im vorgeheizten Backofen bei 260\u00a0Grad\u00a0fallend auf 210 Grad sa ca. 60 Minuten backen. Die Letzten 10 Minuten mit leicht ge\u00f6ffneter Backofent\u00fcr um eine r\u00f6schere Kruste zu erhalten.<\/p>\n<p><a href=\"http:\/\/www.samskitchen.at\/?attachment_id=2345#main\" rel=\"attachment
