Buschenschanken gibts bei uns fast an jeder Ecke. Normalerweise wird dort selbstgebackenes Brot, meistens Roggenbrot zur &#8222;Jausn&#8220; serviert. Also dachte ich mir, heute gibts Anstelle des sonst \u00fcblichen Brotes, ein Jausenweckerl, eine Mischung aus Roggenvollkornmehl und Weizenmehl T700.<\/p>\n<p>Vorteig:<br \/>\n200 g Roggenvollkornmehl<br \/>\n20 g Anstellgut RST<br \/>\n200 g Wasser<\/p>\n<p>Diese Mischung ca. 12 Stunden bei Raumtemperatur stehen lassen.<\/p>\n<p>Hauptteig:<br \/>\nVorteig ca. 440 g<br \/>\n500 g Weizenmehl\u00a0T700<br \/>\n250 g Wasser<br \/>\n15g Gerstenmalz<br \/>\n5g Brotgew\u00fcrz<br \/>\n16g Salz<br \/>\n7 g Frischhefe<br \/>\n150g Lievito Madre<\/p>\n<p>Alles zusammen zu einem glatten Teig kneten.<br \/>\nTeigruhe ca. 30 min bei Raumtemperatur.<\/p>\n<p>Nach der Ruhephase kann nun der Teig in 70g\u00a0 St\u00fccke geteilt werden und weitere 20 Minuten zugedeckt rasten . Nach der Teiglingsruhe kann man die Teigst\u00fccke auf einem Leinentuch durch kreisf\u00f6rmige Bewegungen rund\u00a0schleifen.\u00a0Nach dem Schleifen, die Labern mit dem Schluss nach unten in groben Roggenschrot \u00a0legen und auf einen Leinentuch zur Gare absetzen.<\/p>\n<p>Backrohr rechtzeitig auf 250 Grad aufheizen.<\/p>\n<p>Bei 3\/4 Gare \u00a0einschiessen und kr\u00e4ftig schwaden und ca. 20 Min. backen. Nach ca. 10 Min.
